We have been told to stay away from fried foods. As everyone of us know, fried foods are not that healthy. But fried food every once in a while should not be that bad. I myself is not a big frying fanatic. I dread the clean up that’s why.
Those times when I have to fry, I use a deep fry thermometer to ensure that I’m frying at the recommended temperature. This is very critical because if the temperature is too high, the food burns, and if it’s too low you tend to fry longer thus, the food becomes greasy.
We love the taste of fresh fried foods hence it is best to keep the completed batches on a warming drawer (my stove is equipped with one), or keep them in the oven set at the lowest temperature while frying the rest of the food.
Drying fried food on a wire rack will will help retain their just-fried crunchiness. It is better than drying them directly on a paper towel.
