I first had a taste of this recipe at my sister’s house, and I loved the refreshing and wholesome taste. As expected, the recipe hag that I am, I had to get hold of the recipe and since then it has been a staple in our home.
1 can chickpeas, rinsed and drained
1 can black beans, rinsed and drained
1 can red kidney beans rinsed and drained
3 large tomatoes, seeded, chopped
1 medium chopped red onion
juice of four lemon
1 packet of Goya powdered chicken bouillon
1 bunch of cilantro, chopped ( I love the taste of cilantro, you can adjust the quantity whichever you prefer)
In a large bowl, mix all the ingredients together. Serve immediately or cover and refrigerate up to 4 hours.
